Yummy in our Tummies.

Well, I cannot lie. I have to admit the most exciting part of moving into our new place and receiving our shipment was that I could finally get back in the kitchen to make treats and meals.

Here’s a peak into what I have made the last 2 weeks. Most of the ingredients  I use are not from the store in Whati. The store here sells a variety of meats that are all vacuum sealed and frozen (for who knows how long?), a boat-load of frozen processed foods (chicken fingers, pizza, ‘hungryman’, frozen veggies, frozen fruit, ‘wok’ asian meals, frozen fries..and onion rings!…), boxed process foods (cookies, cereals, baking needs, vegetable oil..no olive oil!, candy, chips, pop), and then about once a week fresh produce is delivered. This includes potatoes, onions, grapefruit (?!), ginger, strawberries, celery, blueberries, peppers, zucchini, cucumber, and a few other items I cannot remember. Oh and they have eggs, milk, almond milk, bacon, breakfast sausages, and a few houseware items. As you can read, there is a pretty good selection but of course there is a premium price on the fresh produce and it also sells out quickly.

We typically by eggs, milk, peppers, potatoes, ground beef, frozen veggies (and chicken fingers every once in a while). Other than that, our meat has been brought up from Yellowknife along with about 20 sweet potatoes, butternut squash, 5 onions, and 10 bananas. It is much cheaper to buy in Yellowknife so when Joshua went there for Lucy’s 12-week check up he picked up a bunch of food for us.

Okay here is what we have made. You will notice a pumpkin theme – I opened a can of pumpkin puree and did not want it to go to waste. Thus, pumpkin-everything!

    • Evelyn! All is well up here. Thank you for all your help via my mom. We continue to make improvements with our students each day and are adapting to the different needs up here. Unfortunately our plans have changed and we are not longer coming home : ( I would love to talk about connecting with a class from the south (everyone refers to the provinces as ‘the south’ here). I will email you so we can discuss it further. The students here are obsessed with ‘life in the big city’…they would love it.
